Good Hearty Soups in a Blender

With the cold weather clinging to our shores, it only takes a step outside to remind us that we are still very much in winter. Yes the skis might look clearer and the days are getting lighter but the chill remains.

However, having winter hang around isn’t all bad as there are some good things to come from it, largely the seasonal vegetables that are available. This season serves up some sumptuous food, with good hearty meals a staple of our diet.

A Classic Soup

One of the best ways to stay warm and indulge in a quick to make yet delicious meal is to produce a thick soup. Serves this up with some rustic bread with butter melting on it and you have a great meal. Be honest, your stomach is grumbling in anticipation already isn’t it.

The ingredients at this time of year are plentiful but a particular favourite that inspires images of log fires on a cold day is sweet potatoes. Using this as the leading ingredient we have put together a delicious soup recipe. All you need are your ingredients and a blender. Cream of Sweet Potato Soup

This is an easy to make soup, full of flavour and goodness.

Ingredients:

4 sweet potatoes
8 cups water
1/3 cup butter
1/2 cup tomato sauce
2 tablespoons half and half
2 teaspoons salt
1/8 teaspoon pepper
dash thyme
1 cup cashews (split in half)

Method:

To start things, preheat your oven to 190 degrees Celsius and then bake your sweet potatoes for roughly 45 minutes. Let them cool and peel before mashing them in a bowl, don’t worry if there are a few lumpy bits it just adds to the texture. Alternatively, if you want to create a puree you could blend them whilst adding the other ingredients to the mix to infuse the flavours.

When you are happy pour the mixture into a large saucepan and heat gently. You only want the ingredients to simmer and, on a lower heat, leave for 50-60 minutes, stirring occasionally.

Finally add the cashews and let it all blend before serving. Don’t forget to add the crusty bread when serving!
